A few years ago, in a desperate attempt to find a good, hearty crockpot soup that feeds Derek’s love of comfort food recipes, I came across this recipe on the Slow Cooker Gourmet website. Now I’m not terribly fond of buffalo chicken wings; they are painfully spicy and just a lot of messy work, but Derek’s (and any male really) obsession with wings made me investigate further. This recipe is not hot at all (but also very easy to make “wings” hot) and it is just a satisfyingly easy-to-make and easy-to-eat soup. It is also now on Derek’s top meal requests list, which is a point of pride for me because the rest are from his infamous family cookbook.
Enter the ingredients list:
1 pound ground chicken
15 oz canned white navy beans drained and rinsed
14.5 oz can fire roasted tomatoes drained
2 cups chicken broth
1/4 - 1/2 cup Frank’s Red Hot buffalo wing sauce (the recipe says to start with a 1/4c, but I always do 1/2c and its never too spicy, but just the right amount of flavor).
1 package ranch dressing mix
1 cup frozen corn kernels
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/2 teaspoon celery salt
1/2 teaspoon dried cilantro
1/4 teaspoon salt
8 oz cream cheese
Blue cheese crumbles (to sprinkle on top)
The beauty of the crockpot is obviously your ability to dump ingredients and walk away right? This is especially true with this recipe. Aside from browning the ground chicken, all you have to do is dump all of the ingredients (minus the cream cheese and blue cheese) and set it on low for 6-8 hours or high for 4. About 20 minutes before serving, put the cream cheese in, then when you are ready to eat, sprinkle the blue cheese on top.
This recipe is also very easy to fit to dietary needs. If you can’t have legumes, just omit the navy beans. Can’t have dairy? Omit the blue cheese on top and sub cream cheese for dairy-free cream cheese or heavy coconut cream.
