You read the title. Your significant other might find it as good fuel for poking fun like my husband does, but hey, I will let you in on a little secret, it’s delicious! When I was younger and living that one to two pot coffee life, I didn’t mind drinking black coffee as long as it was saturated in sugar. As I’ve gotten older and a nice little thing I like to call my metabolism has slowed down (thanks age), I’ve noticed two things about my coffee routine - I don’t like my coffee black anymore, but I also don’t want it saturated with sugar. It became abundantly more clear how much sugar gets pumped into absolutely everything we eat (even deli meat, people) when I was on the Keto diet and that made me all the more aware of how I make my coffee.
Okay, now that being said, I’m still pretty basic and I still love my PSLs and my Mint Mochas, so cutting out my cup of joe in the morning just isn’t an option. Thanks to some real MVPs; Pinterest, the Google, and our mom, I’ve come up with a pretty delicious, albeit a tad high maintenance, way to make my coffee in the mornings. And I’ll tell ya, sometimes this coffee is the highlight of my day, especially when Charlie decides 4:45 am is a perfectly acceptable time to start the day.
So here is the ingredients for the best non-Starbucks-Starbucksy coffee y’all will ever have!
The Completely Keto-Friendly Coffee
So this first iteration is keto friendly (I think), dairy free, sugar free, and wonderful. I first start with brewing a cup of low acid coffee. My Keurig is my best friend, but sometimes the pre-made pods that work with it are not. So I bought these fill-it-yourself pods on Amazon and they are amazing. Now the reason I fill my own Keurig pods is because I drink low acid coffee. The acidity in coffee can really wreak havoc on your digestive tract and isn’t a necessary part of my day, so I really like drinking this low acid coffee I also found on Amazon called, Pure Roast House Blend (a little amendment here… I just found keurig-friendly pods by this company at the grocery story, so win-win!!).
Next, in my Magic Bullet cup, I put in about three ounces of NutPods (choose yo flavor) and an ounce of unsweetened coconut/almond milk (I linked my favorite brand). Then I add a tablespoon of coconut oil for some fat, a scoop of Vital Proteins Collagen Powder and a scoop of Perfect Keto MCT Oil Powder (I use chocolate flavor). Now the Perfect Keto powder has some stevia in it, so I would definitely taste your coffee before adding additional stevia. If you do add, I use SweetLeaf Liquid Drops and I add like 3 drops max. Finally, I add a dash of cinnamon to the Magic Bullet cup, nuke it for 40 seconds, dump in my cup of low acid coffee and this is key… BLEND IT. I don’t have a milk foamer or anything fancy like that, so blending it for like 15 seconds really is the key ingredient to making this cup of doctored joe feel barista-made. I’ll map out the ingredients for each, below! But now, for some substitutions based on preferences...
If you don’t mind a little sugar…
Instead of Nut Pods, in the Fall and Winter I like to mix 2-3 ounces of Califia creamer (essentially coconut milk with about 2g of added sugar) with my coconut/almond milk instead of NutPods. NutPods are really great for adding flavor when you don’t want to add a sneaking iota of sugar, but they definitely have a more subtle flavor than Califia creamer does. During the holidays, Califia puts out a pumpkin spice and a mint mocha that are DIVINE. I even add a little of the mint mocha to Charlie’s milk at lunch and call it “Christmas milk”.
If you are lactose tolerant…
A good way to get some good fat and to also make your coffee a little creamer is to add two ounces of heavy whipping cream to your coffee in lieu of coconut oil and coconut/almond milk. You’re welcome.
If you don’t want fuel for your hair, skin, nails or brain…
MCT oil is amazing for weight loss, fueling your brain, and can even help regulate blood sugar and fight Alzheimers. I love using MCT oil to combat my ever-present “mom brain”. But if you do not want to add it to your coffee, I would sub in a tablespoon of cocoa powder and definitely have 2-3 drops of liquid stevia ready to add to your cup.
Collagen is the most abundant protein found in the human body and helps in promoting skin elasticity, protecting your organs, joints and tendons, and more. The reason I add collagen to my morning coffee is because as we age, our collagen production decreases. SO. Collagen peptides are great for reversing the effects of age on our skin, easing joint pain, reducing cellulite, improving digestive health, and more! If you don’t want to use collagen in your coffee, you can just omit it, or add unsweetened protein powder of your choice. However, I highly recommend keeping this one in your morning routine, however you want that to be.
